Potato and Fenugreek leaves Fry

Ingredient:

  • Potato - 3 
  • Methi leaves ( fenugreek leaves) - 1 bunch
  • Onion - 1 big
  • Mustard - 1 tsp 
  • Bay leaves - 1 
  • Split urad dal - 1 tsp 
  • Jeera - 1 tsp

  • Tomato - 2
  • Garlic - 3 to 4 nos
  • Ginger - a inch
  • Cardamom -1 
  • Clove - 1
  • Cinnamon - 1 small stick

  • Curry leaf - as needed
  • Chilli powder - 1 tbsp 
  • Turmeric powder - a pinch 
  • Garam masala - 1/2 tsp 
  • Coriander powder - 1/2 tsp 
  • Salt - as needed 
  • Oil - as needed.


Method:

  • Pressure cook potatoes
  • Cut it a small pieces.
  • Chop the onion , tomato and fenugreek.
  • Heat the pan , add some oil.
  • Then add bay leaves, clove,cinnamon,ginger,garlic,curry leaves.
  • Now add onion fry it.
  • Then add tomato .
  • Let the tomato fry.Then add chilli powder, corinder powder,turmeric powder, garam masala powder.
  • Add the chopped potato cubes.
  • Don't overcook the potatoes.
  • Fry in medium heat till the potato absorbs the masala. 
  • Add the methi leaves and fry for a few minutes. 
  • Remove from flame and garnish with chopped coriander leaves
  • Serve hot with hot rotis or rice.
