Biryani is one of the most popular dishes in Hyderabad, India.
There are two ways to prepare Hyderabadi Biryani. One is, precooked meat method and the other is raw meat method. In both the methods, meat and half cooked rice are arranged in layers, and cooked until the rice and the meat are fully cooked. This Chicken Biryani is precooked meat method.
Whenever I make it is for my husband.He love briyani. It always turns out great.
It takes such a short time to make.

Ingredient I (Chicken Marination):
Chicken

2 or 3 half thigh

Yogurt | 1/4 cup |
Turmeric powder | 1/2 tsp |
Red chilli powder | 1 tsp |
coriander powder | 1 tsp |
Ginger/garlic paste | 1 tbsp |
salt | little just for marination |
Ingredient II(Cooking Rice):
Basmati Rice | 3 cups |
Bay leaves | 2 nos |
Cloves | 2 nos |
water | as needed |
Salt | as needed |
Oil | 2 tbsp |
black jeera | 2 tsp |
Cardamoms | 2 nos |
Ingredient III (Chicken Gravy Preparation):
Bay leaves | 2 |
Cardamoms | 2 no |
Cloves | 2 no |
Cinnamon stick | 2 no |
Mint leaves | 1/2 bunch |
Coriender leaves | 1/2 bunch |
Onions | 2 medium |
tomato | 2 medium |
Ginger/garlic paste | 1 tbsp |
Red chilli powder | 2 tsp |
Coriander powder | 1 tsp |
Star anise | 2 no |
Garam masala | 1 tsp |
Salt | as needed |
Oil | 2 tbsp |
Ghee | 2 tbsp |
Fryed Onion | as needed |
curd | 2 tbsp |
cashew nut | 5 to 8 nos |
dry grapes | 2 to 5 nos |
food color | as needed |
Milk | 1 tbsp |
saffron | pinch |
Green Chilli | 4 nos |
Wash the chicken.
Marinade the chicken by mixing yogurt,ginger/garlic paste,turmeric powder,chilli powder and some salt.
Wash and soak the rice.
Heat the water with some salt on it.
Add cloves,bay leaves,cardamoms,black jeera and oil.
Let it comes to boil.
Now add the soaked rice in the water.
Drain the water when the rice is half cooked.
Heat 2 tbsp oil and ghee in a pan and add cloves,bay leaves,cinnamon,cardamoms,green chillis,mint and coriander leaves fry for a few seconds.
Now add the onions, tomato and ginger/garlic paste and fry it.
Add red chilli powder,coriander powder,garam masala.
Add the chicken with the mariande.
Mix it well and cook on medium heat till the chicken is done and the gravy is thickens.
Take a big baking tray first spread some ghee at the bottom of the tray.
Now Spread the half cooked rice in baking tray
Add the chicken gravy, Second a layer of rice,followed by a chicken.
Now add the soak saffron milk on the top of rice and some food color if needed.
Add a tsp of ghee and add cashew nut , dry grapes & fry it till it turns light golden brown.
Add sprinkle it on the top of the rice.
Now sprinkle chopped coriander and fried onions.
Biryani is ready to be baked.
Seal it tight with aluminum foil.
Pre heat the oven and bake biryani for about 30 mins at 400 degrees.
After 30 mins take out the tray and mix it.
